World’s first flavour rainbow coming to east London

Food artists Bompas & Parr are creating the world’s first flavour rainbow in east London.

The pair, who made their name building giant jelly sculptures, will use flavoured mist illuminated by white light to create the rainbow beneath a flyover by the Royal Docks.

Sam Bompas said visitors stepping into the space would experience a “robust cascade of flavours” inspired by some of the historic goods that came to London through the docks, including pineapple and watermelon.

He said: “We’re not going to be giving you one of your five a day by stepping into the rainbow but it should be quite an experience”.

The team, whose previous projects include re-creating some of London’s lost buildings from gingerbread for Selfridges Christmas window, will also create a giant rainbow over the docks from October 15 that will be visible when the sun shines.

It is part of a plan to make the old docks a new cultural hub for London including an enterprise zone offering tax breaks to creative companies moving to the area.

Bompas said he hoped the installation of the rainbows would be seen as “a signifier of inclusion and hope and happier futures and better tomorrows”.

He added: “With the Royal Docks once London’s gateway to world trade, the celebration of rainbows that have a flavour has important local resonance. Many of the foods, new tastes and scents coming into London from across the world passed through this area in terms of import, warehousing and manufacturing.

“The Royal Docks is the obvious place to showcase the world’s first Flavour Rainbow as we share its history and celebrate its vibrant future as the new cultural engine of London. It’s a joy to be able to create a sense of wonder particularly within the grandeur of Europe’s very first flyover.”
