Ramsay's on menu at Claridge's

One is known as the most volatile of volatile chefs. The other is one of London's most venerable hotels - and has been searching for a major talent to star in its restaurant. Now Claridge's has found Gordon Ramsay and the two have joined forces in what appears an unlikely union.

However, the once-staid hotel has recently become "cool" among fashion and magazine types. So a slice of Ramsay, currently basking in the glow of being London's only three-star Michelin chef, is just what the Brook Street institution needs. The fiery chef-proprietor of the eponymous restaurant in Chelsea will be running the operation at Claridge's when it opens in September.

Just so diners know, the new venture will be called Gordon Ramsay at Claridge's. But first, a £2 million refit has to be carried out, and Ramsay must open another restaurant at One Devonshire Gardens, a smart hotel in Glasgow. Its planned modern-European style of cooking will also be the style at Claridge's, where diners can expect Ramsay signature touches, such as flowers in the cooking.

Meanwhile, the new look is in the hands of celebrated restaurant designer Thierry Despont. Ramsay will help choose china, cutlery, glassware and uniforms. He promises the ambience of the new venture, in the heart of Mayfair, will be "unstuffy".
