Forget cronuts and duffins, there’s a new baked good in town.

Pão de queijo is a staple in Brazil as well as other South American countries, and is made from cassava flour and cheese along with eggs, butter and salt.

It’s a traditional Brazilian farmer-style take on European bread and should be crunchy on the outside and fluffy and cloud-like within, a little like a cheesy profiterole.

Sounds good, doesn’t it? And what’s more, due to its simple ingredients it is naturally wheat and gluten free. The cheese content doesn’t make it enormously healthy, but still.

While the bread always been a popular order in Brazilian restaurants around town, it is now becoming the star of the show for the first time, with a pop-up all of its own.

Dona Rita, which started as a food stall at Druid St Market, is setting up shop in Old Street station for two weeks selling the cheese bread, both plain and with familiar toppings such as cream cheese and strawberry jam for a British twist on a Brazilian classic.

The stall will also sell bake-at-home packs of the bread, which the team say are as easy to cook as a frozen pizza.

The stall will run from May 8 to May 21, from 7.30am to 7.30pm.
