New restaurant will only serve dishes created from Borough Market produce

A restaurant is opening tonight, January 17, at Borough Market serving dishes created entirely from ingredients sold by its traders.

Borough Plates’ menu will change weekly and will be prepared by a rota of top chefs who have worked at venues including Gordon Ramsay’s Maze.

Cuisine on opening night includes Cannon blood sausage with bacon jam and pickled mushrooms; poached red mullet with seared scallops and chard; and raw milk panna cotta.

The restaurant is open for lunch, afternoon tea and dinner. Pictures of the market traders who supply the ingredients will grace the walls. Their produce has been vetted by a panel of Michelin-starred chefs. The kitchen team is led by Paul Hannagen, of London-based Cuisson, which specialises in bespoke and pop-up gastronomic experiences. He said: “From a chef’s point of view this is the dream. We will create dishes with ingredients traders give us each week. Whatever they say is the best quality that day we’ll use.”

Darren Henaghan, Borough Market’s managing director, said: “The idea is for people to try the menu here, go out and buy the produce in the market and then recreate the stuff at home.”

Sean Cannon, of cured meat specialist Cannon & Cannon, said: “We are thrilled to be involved.” The venue, a partnership between Cuisson and Borough Market Charitable Trust, will initially run for two months, opening Tuesdays to Sundays, from midday to 10pm.
