London's best sausages

London offers a wide spectrum of sausages, running from the classic banger to gluten-free. They’re on menus from brunch until dawn, in case things have gone from bad to wurst and you need them to make everything all right again.

Wrapping a sausage in buttery, flaky pastry is usually a good idea and the merguez sausage roll here is French/North African fusion at its finest. The sausage is spicy, has just the right amount of sweet fat, and is served with harissa mayo.

Delicate sausages made from wood pigeon and served with tangy greengage ketchup give new life to the classic combo of meat and ketchup.

A Goan sausage roll, which means it is wrapped up in paratha, with coriander chutney and pickled red onion and curry-leaf mayo. The meat varies but is often pork or mallard.

This restaurant, from Ollie Dabbous protégé Matt Young, does a good line in homemade meats, from nduja to English sausages. There are plans to make some that give new life to leftover cuts.

The sausage here is Cypriot Pastrima, which is dangerously juicy — eat with a napkin to hand — and full of punchy flavour.
