The capital shone at Monday’s UK Michelin guide announcement, as eight restaurants gained their first stars.

Here are their stand-out dishes to try.

Ellory’s lemon sole, citrus butter and liquorice

This original flavour combination, a mix of rich, sharp, sweet and salty, is typical of Matthew Young’s cooking at his informal restaurant on the first floor of Netil House, the multipurpose space where you can do yoga, go to a craft market or have a dance.

Trinity’s roast rose veal, artichokes barigoule, sweetbread and leeks

Hearty autumn fare prepared with a light touch by Adam Byatt, who has devoted his life to making innovative British cuisine since he started out at Claridge’s at the age of 16.

Salt cod ravioli at The Ninth

At American-Japanese chef Jun Tanaka’s ninth restaurant (hence the name) this silken pasta has a liquid egg yolk which oozes over salty cod brandade.

Roe deer at Five Fields

Traditional deer is given a modern twist with the addition of yuzu, salsify and squash. It’s rich but it works. Save room for dessert — lemon custard with lavender meringue and honeyed almonds is perfect.

Guanaja chocolate praline mousse at Celeste

Delicate and not too sweet, this dessert is a satisfying way to round off the tasting menu at this fine dining restaurant in the Lanesborough hotel.
