London Food Month Signature Dishes: Trullo

Trullo’s Head Chef Tim Siadatan shares his take on the London food scene, and what makes the beef shin pappardelle so special

Known for its great food and service, Trullo is a gem within Islington.

The two-floored contemporary trattoria just off Highbury Corner is a neighbourhood Italian, serving simple, affordable River Café-style food, at a fraction of the price.

Opened in 2010 by Chef Tim Siadatan and Jordan Frieda (son of Lulu and John Frieda), Trullo crept into the local food scene where word of its expertly cooked seasonally-focused menu spread like bushfire.

But not everything in the menu is subject to change there.

Trullo lovers simply won’t let Tim take the beef shin pappardelle off the menu (they slow-cook the beef shin for eight hours and tossed in with the pasta).

Speaking about the London food scene, Tim said: “The thing I love about the London food scene more than anything else is how over the past five years it has transformed beyond what I think any of us thought was possible.

“Five years ago, there was only a handful of great restaurants around and now in every neighbourhood across the city, there is an eclectic style of food and people are just doing the most incredible things.”
