London Food Month Signature Dishes: Bibendum

Chef Claude Bosi on Bibendum, its signature dish and Young Chefs' Dinner

In South Kensington stands the stylish Michelin House – the home of chef Claud Bosi’s Bibendum restaurant.

The first floor space features stained-glass windows of the iconic Michelin Man in shades of deep sapphire.

Claud explained that when he took over Bibendum not so long ago, he decided to keep the décor, which is signature to the building.

Bibendum’s menu comprises of seasonal a la carte and a tasting menu for those who want to try a variety of dishes.

Claud said: “We have a couple of signature dishes: one is a tripe as a main course, the other one would be a duck gelée, when it took me 18 months to get it ready.

“This is a very interesting dish. It looks very simple, but so much flavour, packed with flavour.”

Claud moved from France to Shropshire in the late 1990s to become Overton Grange’s sous chef.

He then opened Hibiscus, his own restaurant, in 2000 when within the year he won a Michelin star and was awarded a second one in 2004. Then Hibiscus relocated to London in 2007 and closed in 2016 to make way for Claud’s new venture with Bibendum.

For London Food Month, Claud plays host to five emerging chefs tonight. Young Chefs' Dinner is going to be the first of a yearly series.

He said: “The idea to do this was to bring a bit of wave of young cooks who love and passionate about the job. I want to show them off.

Most of them I know already. But I like their cooking, I like their philosophy and I thought that will be great to do it.”

Bibendum is in Michelin House, 81 Fulham Rd, Chelsea, SW3 6RD.

Tickets for the Young Chefs’ Dinner are £85 for canapés, amuse-bouche and five courses, £140 for the same plus matching wines.
