1. Uppu kari, a delectable Chettinad salted mutton curry made with cherry chillies, at Jamavar, the Indian restaurant of the glamorous Leela Palace Hotel in Chennai.

2. Sunil the cook at Ivory House, which we rented near Galle in Sri Lanka, made egg hoppers, pictured, for breakfast into my idea of an unparalleled start to a day.

3. Watched elephants at the Pinnawala Orphanage wallow and trumpet in the Ma-Oya River, while lunching on the intricately varied Sri Lankan assembly of curry and rice.

4. Black pepper crab at Ministry of Crab in The Old Dutch Hospital in Colombo, where chef-partner Dharshan Munidasa fully explores and exploits his Japanese-Sri Lankan heritage — and the massive crabs from the lagoon.

5. Back in Blighty, saved from anticlimax by sunshine, maître d’ Jon Spiteri, shrimp burger with jalapeno tartare and a sea of friendly faces at Holborn Dining Room.
