Perfect start to a night: prawn and pomegranate miang bites at Farang
Fay Maschler8 February 2017

1. Shaun Hill, of The Walnut Tree near Abergavenny, is guest chef at Parabola in the Design Museum. We start with garlicky bourride shaded with saffron and orange. His book, Salt is Essential, is another way to get to know this enchanting man and his recipes.

2. Gnocchi alla Romana as light as babies’ breath (semolina is the key) with sage and browned butter at Stevie Parle’s Palatino in Clerkenwell.

3. “Ici on peut attendre” wittily (accurately) say the waiters’ T-shirts at Parisian export Ferdi in Shepherd Market. That’s outside in the rain if they are full. Overcooked corn-on-the-cob is £10 plus service. What a laugh.

4. But for the shortage I would have bought iceberg … but luckily at La Fromagerie there are beauteous, Castelfranco lettuces for the heart of a first-course salad.

5. Prawn and pomegranate miang bites start an exuberant dinner at Farang the way it means to go on.
