Simple soups: a recipe for garlic soup

It's an excellent hangover cure...

This rich and comforting soup is inspired by Česnečka, a Czech garlic soup which is said to be an excellent hangover cure. It’s quick and simple to make and packs loads of flavour.

Ingredients (makes enough for 4 servings)

For the soup

½ teaspoon coconut oil

1 large onion, peeled and finely chopped

15 garlic cloves, peeled and minced

1 litre vegetable stock

1 large potato, peeled and diced

½ teaspoon black pepper

1 tablespoon crème fraîche

Himalayan pink salt and freshly ground black pepper

Micro leaves to garnish

Method

Melt the oil in a medium saucepan and sauté the onion until tender, try not to let it colour. Reduce the heat to low and add the minced garlic and sauté for about 5 minutes, stirring all the time.

Pour in the stock and add the potato and black pepper. Bring to a boil and simmer for 10-15 minutes until the potato is soft.

Blend the soup with a stick blender until smooth, add the crème fraîche and blend again. Taste and adjust the seasoning if necessary.

Ladle into warmed bowls and garnish with micro leaves and lots more freshly ground black pepper.
