Simple soups: A detox recipe for tomato, ginger and orange soup

After a week of overindulging, be kind to yourself with this refreshing and zingy soup which will soothe your digestion and boost your immune system

Ingredients (makes enough for 4 servings)

1 tablespoon coconut oil

1 large red onion, peeled and chopped

2 fat cloves garlic, peeled and finely minced

1 tablespoon coarsely grated ginger

Zest of one small orange

1 large carrot, peeled and chopped

1 large red pepper, de-seeded and chopped

5 large organic tomatoes, chopped

500ml vegetable stock

Juice of one small orange

1 tablespoon raw unrefined apple cider vinegar

Himalayan pink salt and freshly ground black pepper

Mixed seeds and nuts to garnish

Method

Heat the oil in a medium pan and add the onion, cook for 3 minutes until soft. Now add the garlic, ginger and orange zest and cook gently for a further 2 minutes. Stir in the chopped carrot, red pepper and tomatoes then pour in the vegetable stock. Bring to the boil and simmer for 10-15 minutes until the vegetables have softened. Blend the soup with a stick blender. Add the orange juice and apple cider vinegar and season to taste.

Serve in warmed bowls garnished with some mixed nuts and seeds for a little crunch.

Food facts

Tomatoes contain all four major carotenoids, the pigments responsible for bright red, yellow and orange hues in many fruits and vegetables. Carotenoids act as antioxidants in the human body and also have anti-inflammatory and immune system benefits. The tomato skin contains a high concentration of the carotenoids found in tomatoes, so to make sure you get as much as you can, don’t remove the skin.

Notes

If you want a more intense tomato flavour add a handful of chopped sun-dried tomatoes to the mix before blending.
