For their second recipe, Els and Bels, from Piccolo Plates are sharing their Cod and Salmon Goujons recipe which is a brilliant alternative to shop-bought fish fingers.

Easy to make and with minimal ingredients, they are a brilliant way of getting protein and omega 3 fatty acids into your children's diet which is vital in the early development of brain and nerves.

Try the recipe below and get your little ones involved with rolling the fish fingers in the flour and dipping them in the egg mixture. It will keep them entertained for longer than you might think.

Cod and Salmon Goujons

Ingredients (makes 10-12 goujons)

1 salmon fillet

1 cod fillet

2 free range eggs

a handful of grated parmesan

sprinkle of gluten free flour

100g of ground almonds

Method

Preheat your oven to 180C and then cut the salmon and cod fillets into small fish finger sized pieces.

Put your ground almonds into a baking tray and place in the oven for 3-4 minutes or until they are just starting to turn golden brown. Let them cool slightly and then mix through your grated parmesan.

Next, crack your eggs into a bowl and beat them lightly.

Sprinkle your gluten free flour on a chopping board.

Take each piece of fish, dust it lightly in the flour, coat in the egg, then roll in the ground almond mixture and set aside. Repeat this process with each piece of salmon and cod.

Place the fish on a lined baking tray and cook in the oven for 15-20 mins until cooked through.

Remove from the oven, serve and enjoy.
