My favourite restaurant with... Josep Carbonell, executive chef at Brindisa Tapas Kitchens

Josep Carbonell has been with Brindisa Tapas Kitchens Ltd since the very beginning, opening Tapas Brindisa London Bridge in October 2004 alongside José Pizarro and, more recently, Tramontana Brindisa in Shoreditch. There are now four restaurants. Prior to this, Carbonell worked in London at Albero and Grana before moving to Gaudí restaurant in Clerkenwell for five and half years, where he was head chef for the last two. Josep is now based in Barcelona and London, spending two weeks a month here working alongside the team of head chefs.

Where would you pay to eat out? "Due to the recent opening of Tramontana in Shoreditch, I’ve had to go up and down Old Street thousands of times in the last few months. On one of those walks I discovered Kêu! deli (332 Old Street, EC1V, keudeli.co.uk) which serves Vietnamese Sandwiches."

Why? “I am a “bocadillo” lover and this combination of French and Vietnamese baguette is just amazing.”

What do you eat there? “My favourite sandwich is crispy pork belly baguette with sauce.”

Who would you take? “I often go there with my colleague and friend Victor Calvente (BTK General Manager) and members of the staff. Chefs are always very busy and this is a good place for a quick bite.”
