How to make Kiwi & Mint Mojito ice lollies

Fingers crossed for a sunny Bank Holiday weekend...

Zingy and sweet ice lollies, perfect for a bank holiday weekend. If you leave out the rum the kids can enjoy them too!

Ingredients (makes 10-20 lollies)

250 ml water

Large handful of mint leaves

75g sugar

75ml rum

250ml freshly squeezed lime juice

4-6 kiwis, peeled and sliced into thick rounds

Method

Put the water and sugar into a medium saucepan and slowly bring to the boil, stirring constantly, until the sugar has dissolved. Turn the heat down to low and add the mint leaves. Leave to simmer for 10 minutes, stirring every now and then.

Pour the mixture through a sieve to remove the mint leaves then pour the strained liquid into a high speed blender. Add the rum, lime juice and four whole kiwis and blend until smooth.

Pour about 1oomls of the mixture into a cup and put in the fridge for now. Pour the remaining mixture into small plastic cups and put in the freezer for about an hour until the top has frozen slightly.

Slice the remaining kiwis into thick coins and make a small slit in the centre of each slice. Insert a lolly stick into the slit then place the kiwi coins on the top of each lolly and press down gently so that it sinks very slightly. Any gaps can be filled with the reserved mixture. Freeze overnight or until completely frozen.
