How to make Chicken Raisukaree

For the latest in our low carb series, Beverley Hicks whips up a juicy chicken curry

Juicy chicken and crispy vegetables in a coconut, lime and coriander sauce. This Japanese-style curry is usually served with rice, but for a lower carb alternative try beansprouts stir-fried in toasted sesame oil.

Ingredients (serves 2)

Small bunch coriander

½ tablespoon rapeseed oil

2 tablespoons of Thai red curry paste

1 medium red onion, quartered and sliced

2 fat garlic cloves, minced

1 medium red pepper, cut into strips

4 Kaffir lime leaves

400ml coconut milk

1 chicken stock cube dissolved in 200ml water

2 tablespoons fish sauce

2 medium chicken breasts, sliced thinly

75g shelled edamame beans

5 spring onions, sliced on the diagonal

Juice 1 lime

1 small red chilli, sliced finely

To serve

Black sesame seeds

Shichimi Togarashi (Japanese 7-spice)

Coriander, chopped

Method

Chop the coriander stalks finely and roughly chop the leaves, put both to one side.

Heat a wok on high, add the oil and cook the curry paste, stirring constantly, for 2-3 minutes.

Tip the onion, garlic, chopped coriander stalks, pepper strips and lime leaves into the wok and stir fry until everything is coated in the paste.

Pour in the coconut milk and stock, add the fish sauce and lower the heat to a simmer.

Add the sliced chicken and stir to make sure it doesn't clump together. Tip in the shelled edamame beans and continue to cook until the chicken is cooked through.

Remove the lime leaves and stir in the sliced spring onions, lime juice and chilli.

Ladle the curry into warmed serving bowls and sprinkle over some black sesame seeds, a pinch of Shichimi Togarashi for a little extra heat and some chopped fresh coriander.
