How to make Apple and Cinnamon Mini Cakes

These Apple and Cinnamon Mini Cakes are the perfect autumnal treat served with a luxurious cream cheese frosting - heaven every time

Ingredients

275g Organic Self Raising Flour

2 Organic eggs

225g Organic Dark brown soft sugar

100g unsalted butter

3 tbsp Cinnamon

175ml organic milk

225g apples, peeled, cored and chopped

Cream cheese frosting : 100g unsalted butter, 150g organic cream cheese, 500g icing sugar

Method

Preheat the oven to fan 140C/conventional 160C/ gas 3.

Grease a 12-hole mini cake tin tin.

Cream the butter and sugar together.

Sift in the self raising flour and cinnamon. Add the apples and milk. Mix thoroughly.

Pour into the cake tins, and bake in the oven at 160c fan for 10-15 minutes until the sponge is light and springy to the touch.

Once cooked take out of the tins and leave to cool on a wire rack.

Cut the cakes into three even layers.

For the Cream cheese frosting beat together the butter, cream and icing sugar until smooth.

Once the cakes are cooled you can pipe the ganache onto each layer. Decorate with dried apple chips. Delicious!
