How to make a Citrus salad with honey and orange flower water dressing

This zingy salad to kickstart your New Year intentions

After all that rich and stodgy Christmas food, this bright citrus salad with its sweet honey and orange flower water dressing will be a welcome change - and a perfect way to keep your New Year resolutions.

Ingredients (serves 2)

For the salad

1 lime

1 orange

1 pink grapefruit

½ small red chilli, finely diced

Small handful mint leaves, finely shredded

1 tablespoon pistachios, chopped

For the dressing

2 tablespoons runny honey

½ teaspoon orange flower water

¼ teaspoon ground coriander

Salt and freshly ground black pepper

Method

With a sharp knife peel the lime, orange and grapefruit and cut into thin slices across the segments, reserving any juices.

To make the dressing, put the reserved citrus juice and all the dressing ingredients into a screw top jar, secure the lid and shake well. Taste and adjust the seasoning if necessary.

Arrange the citrus slices on a large serving plate and sprinkle over the diced chilli.

Give the dressing another shake and pour over the salad. Serve sprinkled with the finely shredded mint leaves, chopped pistachios and plenty of freshly ground black pepper.
