Heatwave recipes: How to make watermelon, strawberry and lime ice lollies

Fresh juicy watermelon and strawberries, combined with coconut milk and zingy lime make these tri-coloured ice lollies a refreshing and healthy treat

Ingredients (makes 6-10 ice lollies)

200g watermelon flesh, roughly chopped

200g strawberries, hulled and roughly chopped

3 tablespoons honey, divided

200ml coconut milk

1 teaspoon vanilla extract

Large handful fresh spinach

Zest and juice of 2 limes

6-10 wooden lolly sticks

Method

Put the watermelon, strawberries and 2 tablespoons of the honey into a blender and process until smooth. Pour into ice lolly moulds leaving a 2cm gap at the top, insert the lolly sticks and freeze until solid, 3-4 hours or overnight if possible.

Mix together the coconut milk and vanilla extract and pour about 1cm of the mixture onto the top of each lolly mould. Return to the freezer until the coconut milk has frozen.

Put the spinach into a small saucepan over a medium heat. Add 1 tablespoon of water and stir until wilted. Tip the spinach and any remaining cooking water into a blender and blend for 1-2 minutes. Strain over a very fine sieve then add the lime juice, zest and honey to the strained juice. Pour about ½cm of the bright green liquid into the top of each mould and return to the freezer until completely frozen.
