Forget avocados, sweet potato toast is the new breakfast trend we’ll all soon be eating

Gluten-free lovers rejoice, there’s a new way to enjoy a slice of toast in the morning - and it’s much healthier than tucking into a couple of rounds of white bread

Just when we all thought that the avocado on sourdough trend would never leave our Instagram feeds, a new toast trend is threatening to topple its reign - and it doesn’t even involve bread.

Food blogger Kelsey of Little Bits Of has discovered that thinly sliced sweet potato is just as good a base for sweet and savoury breakfast toppings, and now her ingenious new food hack is taking off across the globe.

Kelsey described on her blog how she discovered the toast alternative whilst experimenting in the kitchen after realising she had run out of bread.

Rather than head to the shops, she cut a leftover sweet potato into 2cm thick slices and placed them into the toaster for around four minutes until they were browned.

The result was a deliciously sweet and warm breakfast alternative that could be slathered in almond butter and bananas, or avocado and pine nuts for a savoury treat.

"I knew that it was an awesome idea and although it doesn’t really require a recipe, I had to share it with you!," Kelsey wrote on her food blog once she had tried the creation.

The food blogger first discovered the ingenious breakfast hack in May but now the word has spread and everyone is doing it on Instagram.

There are currently 358 snaps of sweet potato toast on the site, ranging from savoury melted cheese and prosciutto to deliciously sweet chocolate spread creations.

Best of all, sweet potatoes are an excellent source of vitamin A, vitamin C, manganese , copper, potassium and vitamin B6, so the trend is bound to capture the attention of the health-conscious, clean eating brigade.

They’re also a great toast alternative for those who’ve adopted a gluten-free diet.

So pile some roasted tomatoes and mashed avocado onto a couple of rounds of sweet potato tomorrow morning and you’ll instantly be on your way to your five-a-day before you’ve even jumped on to the Tube.
