Cinzia Ghignoni is head chef at The Table restaurant in Southwark

Where would you pay money to eat and how often? “I go to The Clerkenwell Kitchen (The Clerkenwell Workshops, 27-31 Clerkenwell Close, EC1R; theclerkenwellkitchen.co.uk) about once a month for lunch. I also might go to La Fromagerie for a lovely cheese plate and a glass of wine.”

Why? “I’d go with a friend and we’d walk together. It is similar to The Table in the sense that we both take sustainability quite seriously. So all the products they use are fantastic and Emma is a real, natural cook. I like really simple, natural food and she will do something like pressed pork belly with cockles, peas and saffron. Simple food, very well made.”

Who would you take? “My partner or I’d like to take my boss sometime.”

What do you eat there? “Her devilled crab is fantastic. When you’re a chef, you want something simple when you go out. You don’t want anything complicated as you’re working with food all week. So I might even have something really simple and satisfying.”
