Every series of MasterChef declares that “cooking doesn’t get tougher than this” – but the version of the show where that’s really true is The Professionals.

In a competition featuring contestants who actually cook for a living, there’s a sense of even greater pressure to impress the judges.

With Michel Roux Jr now fronting Kitchen Impossible on Channel 4, it’s two Michelin-starred chef Marcus Wareing returning to set challenges alongside fellow judge Monica Galetti – whose facial expressions prove as hilarious as ever.

This time, Wareing and Galetti are each setting a Skill Test to three of the six contestants, who will have all three judges eyeing them up as they attempt the challenges.

Galetti’s challenge is to make an Ile Flottante – or Floating Island to you and me – which consists of a meringue floating on a bed of custard. Yum.

Wareing’s challenge is to cook a blue steak (meaning it barely touches the pan, but has to still be warm in the middle) with a peppercorn sauce.

They both sound delicious – but there’s only 15 minutes to create each one, so it won’t be plain sailing for everyone.

Later the contestants must prove their skill and invention with a Signature Dish, with only three of them able to move ahead to the quarter finals. Let the hunger games begin.
