Recipe: Chicken Chilli Men

Make your own chilli sauce and add as much as you can handle!

Serve 2

Cooking Time: 30 minutes

Ingredients:

  • 275g soba noodles
  • 3 tbsp vegetable oil
  • 2 boneless skinless chicken breasts | cut on the diagonal into 1cm strips
  • 1 green pepper | trimmed, deseeded + thinly sliced
  • 1 small cougette | thinly sliced
  • 1/2 red onion | peeled + thinly sliced
  • 4 spring onions | trimmed + cut into 2.5cm lengths
  • 300ml (1/2 pint) chilli sauce

Instructions:

  1. Cook the noodles in a large pan of boiling water for 2-3 minutes or until just tender
  2. Drain thoroughly and refresh under cold water
  3. Heat a wok over a medium heat for 1-2 minutes or until completely hot and almost smoking and add the vegetable oil
  4. Add the chicken, pepper, courgette, red onion and spring onion and stir fry for 3-4 minutes until the chicken is cooked and the vegetables are lightly coloured
  5. Add the chilli sauce and bring to the boil
  6. Divide the noodles between 2 bowls and top with the stir-fry
